Sambar

Sambar

Ingredients

Toordal 1 cup

pinch of turmeric

2-3 green chillies

water 2 cups

tamarind

1 big onion sized tamarind

2 carrots

1 drumstick

1 brinjal

2 tomatoes

7-8 small sambar onions/1 big onion

2 tsp sambar pwd

Popu/Tadka/Seasoning

1 tsp mustard seeds

4-5 garlic pods

3-4 red chillies

cury leaves

coriander leaves

1/2 tsp hing/asafoetida (optional)

3-4 red chillies

Procedure

  • pressure cook the toor dal,turmeric and greenchillies for 8-9 whistles.
  • soak tamarind in 1/2 cup water and keep it on stove for a minute(this process makes you easy to extract the tamarind juice).
  • In a cooking vessel pour 2-3 cups of water and add chopped carrot,brinjal,drumstick,tomatoes,sambar onions(no need to chop these),and bring them to boil till they are very soft……now add the cooked toordal and mix well with the veggies…..after 5 mts add tamarind juice and cook for 10 mts……..now add sambar pwd and cook till the desired consistency comes……
  • Now pour 2-3tsp  oil ina pan and add mustard seeds,garlic pods,red chillies,curry leaves,hing and fry for a minute or two and add this popu into the boiling sambar……
  • Add coriander leaves cook for another 5 mts and switch off the stove
  • serve hottttt…..with rice ,idli,dosa……..

Mango-Dal/Pappu-Mamidikaya

Pappu-Mamidikaya

Ingredients
1 cup Toor Dal/Yellow Lentil/Kandipappu

2 very small sized mangoes chopped into pieces

pinch of turmeric

2-3 green chillies

1 cup of tamarind juice(depends on your tamarind)

coriander leaves

salt to taste

Popu/Seasoning/Tadka

3-4 tsp oil

1 tsp ghee

1 tsp black mustard seeds

1/2 tsp jeera

4-5 garlic

curry leaves

pinch of hing/asafoetida/inguva

3-4 red chillies

Procedure

  • Pressure cook Toor dal  along with green chillies,chopped mango slices and turmeric pouring little water till the dal is completely soaked (All can be kept in a same bowl).When it is done smash the dal(no need to make it like a paste).
  • Mean while in a vessel pour oil and ghee.when it is heated add all the seasoning items one by one leave it for 1-2mts and add the cooked dal.
  • When the dal is sticking to the vessel add tamarind juice,salt and mix all together and leave it till the mango-dal is ready to your desired consistency.
  • Finally add coriander leaves and switch off the stove.
