Set Dosa

Ingredients

1 cup Urad dal(minapappu)

2 cups rice

1 cup parboiled rice(uppudu biyyam)

3/4th cup poha/rice flakes(atukulu)

1/2 tsp methi seeds

salt

oil to drizzle

finely chopped onions

grated carrot

finely chopped green chilli

coriander leaves to garnish

Method

  • Soak rice, parboiled rice, urad dal and methi seeds in enough water for 6 hours. Separately soak the poha or beaten rice for 1-2 hours.
  • Grind all the ingredients along with poha adding enough water to form a pouring consistency. Let it ferment all over the night.
  • Add salt  before preparing the dosas in the morning and combine well.
  • Pre-heat a dosa pan……. pour 11/2 laddles of batter  and let it cook gradually over medium heat(dont spread the batter all over the pan like a dosa,it should look like a thick pan cake). Drizzle some oil along the edges and let it cook for 2 mts.spread finely chopped onions,grated carrot,finely chopped green chilli……and gently press with the back side of the laddle….
  • Flip the dosa over and let it cook further till it is slightly roasted(this is optional).garnish with coriander leaves and serve hot with coconut chutney/peanut chutney/curry leaves powder……

These dosa’s are very fluffy and should be served hot……

Onion Dosa

Ingredients
1 cup Urad dal(black gram lentil)
2 cups rice
1/2 tsp methi seeds(fenugreek)
onions
oil

Procedure

  • Soak urad dal and rice in two seperate bowls for 6 hrs.You can add methi seeds in either dal or rice bowl .
  • Grind to a fine paste adding water.
  • Let it get fermented overnight with lid . Next day mix the batter well adding salt.
  • Now the dosa batter is ready for making dosa’s.
  • Heat a non-stick pan. Grease the pan with oil. Pour one ladle full of batter over the pan.
  • Spread the batter from the bottom of the ladle evenly making circles. Drizzle oil around the edges of dosa and let it cook on medium heat.Now,spread onions over the dosa and gently press with the laddle so that they are sticked.No need to turn the dosa to the other side.When the dosa turns light brown fold the dosa on both the sides. The dosa generally takes 4-5 minutes to cook on medium heat. Take care not to burn it.
  • Dosa should be served hott.. only then you are going to enjoy the real flavour along with chutney.
