
Fish Biriyani
Ingredients
For Rice:
11/2 cup basmati rice
2 large onions
1tsp salt
11/2″ chopped ginger
To make powder:
1 tsp anise seeds(saunf)-roasted lightly
1 tsp cumin seeds-roasted lightly
1 tsp coriander seeds-roasted lightly
4 cardamoms
3 blades of javitri(mace)
salt to taste
For the Fish:
fish cut into small pieces
curry leaves
15 large garlic flakes finely chopped
3 tsp mustard oil
Ground masala:
6 dry red chillies
1 cup finely chopped fresh coriander
2 tsp freshly chopped mint
2 tsp anise seeds(saunf)
1 tsp turmeric
1/2 tsp cumin seeds-roasted lightly
juice of 1 lemon
Topping/garnish:
2 onions chopped and deep fried till brown
1 tsp ghee
Procedure
lightly roast anise seeds,cumin seeds and coriander seeds.Grind these along with cardamoms,javitri and mace to a rough powder.
Boil 3 cups of water with 1tsp salt,the roughly powdered spices,chopped onion and chopped ginger.
Add rice.Reduce heat and cook covered on low heat till done.
For the fish,gring the dry red chillies with coriander,mint and all other ingredients of the above said ground masala to a paste.Rub this masala on the fish all over.
Place 3 tsp of mustard oil in a frying pan over moderate heat.Allow the oil to smoke,then reduce the heat and add the curry leaves and the sliced garlic.Stir for 2 mts.
Add fish to this oil in batches and fry till cooked.
To serve,put hot rice in a rice plate.Dot with hot ghee.Place fried fish on the rice and top with fried onions.
