
Sambar-Idli
Ingredients
for Idli
1 cup Urad dal(minappappu)
11/2 cup idli ravva
salt
for sambar
Toordal 1 cup(kandi pappu)
pinch of turmeric
2-3 green chillies
water 2 cups
tamarind
1 big onion sized tamarind
2 carrots
1 drumstick
1 brinjal
2 tomatoes
7-8 small sambar onions/1 big onion
2 tsp sambar pwd
Popu/Tadka/Seasoning
1 tsp mustard seeds
4-5 garlic pods
3-4 red chillies
cury leaves
coriander leaves
1/2 tsp hing/asafoetida (optional)
3-4 red chillies
Procedure for sambar
- pressure cook the toor dal,turmeric and greenchillies for 8-9 whistles.
- soak tamarind in 1/2 cup water and keep it on stove for a minute(this process makes you easy to extract the tamarind juice).
- In a cooking vessel pour 2-3 cups of water and add chopped carrot,brinjal,drumstick,tomatoes,sambar onions(no need to chop these),and bring them to boil till they are very soft……now add the cooked toordal and mix well with the veggies…..after 5 mts add tamarind juice and cook for 10 mts……..now add sambar pwd and cook till the desired consistency comes……
- Now pour 2-3tsp oil ina pan and add mustard seeds,garlic pods,red chillies,curry leaves,hing and fry for a minute or two and add this popu into the boiling sambar……
- Add coriander leaves cook for another 5 mts and switch off the stove.sambar is ready….:)
Procedure for idli
- Soak the urad dal and idli ravva in water for 6 hrs.Now,first grind the urad dal adding little water ,when it is completely done add the idli ravva to the grinder ……grind it for a minute and stop…..let this mixture ferment during the night and in the morning after fermentation add salt and mix well……now ur idli batter is ready
- now,grease ur idli plate with some oil and fill with idli batter
- you can use idli cooker or pressure cooker to prepare idli….if you use pressure cooker place the idli plates in the cooker with little water inside the cooker and close the lid without the cooker whistle and cook on high flame…..when the steam comes out of the cooker reduce the flame and cook on sim flame for 10mts……switch off the stove and place the cooker whistle…not to let the heat go out of the cooker…….
- After 5mts remove each idli with a spatula and keep aside….
- Now in a serving bowl place idli’s as many as you want then,pour some ghee on the idli’s …….and then pour sambar on those idli’s……..thats it ur sambar idli is ready……serve hot….
